Southwest Chicken and Rice Bowl



Cook a box of Spanish Rice or make it from scratch
One can of Black beans
One can of Pinto beans
drain both cans of beans
grill chicken and use blackening seasoning
make pico de gallo
green onions, cilantro, sweet tomatoes, lime zest and juice
Top with fresh homemade salsa or your favorite store brand

Salads


Awesome Fruit Salad
One container of strawberries
One half bunch of red grapes
One pineapple cubed
Three navel oranges cubed
One half Honey dew Melon cubed
One container of blue berries

You can also drizzle your favorite flavor Yogurt over the top :0)

Lasagne, salad and french bread


For a 9x13 baker size and 3 layers. Use 8 lasagne noodles (while making the other ingredients, soak the noodles in HOT water) In a pan cook 1 pound of hamburger meat and 1/2 an onion chopped add some Italian seasoning, make the meat small. Then add your favorite Marinara sauce 1 1/2 jars. Simmer with the meat and set aside. In a bowl mix together, 1 container of ricotta cheese, real mozzarella cheese enough for 2cups (I used precious brand and shredded it myself) then add fresh grated parmesan cheese 1/2 cup ans Italian seasoning 2 tablespoons and fresh snipped basil. Layer all this starting with the sauce, then noodles, cheese mixture and so on, making the last layer sauce and cheese - bake at 375 until bubbly and golden.


Fresh spinach, carrots, purple onion, tomatoes. Serve with your favorite dressing


Buy fresh baked french bread from your store bakery and cut in half and brush on real butter and bake on oven rack at 350 for a few minutes until outside is crusty and the center soft

Pantry items used:
Italian seasoning
garlic salt
pepper

Shopping list for this meal:
1 box lasagne noodles
1 pound hamburger meat
1 onion
2 regular size jars spagetti sauce or marinara sauce
Precious mozzarella cheese (enough for 2 cups grated)
parmesan cheese
15 oz. container ricotta cheese
fresh basil
fresh spinach (fresh n easy is a great place to get this)
2 carrots
1/2 purple onion
1 tomatoe
salad dressing
loaf of french bakery bread
butter
